Meatloaf Comfort food

Ah…Marvelous meatloaf.  Meatloaf is a comfort food.  It reminds me of my childhood.  My mother used to add Campbell’s alphabet soup to her meatloaf so we would eat it.  Isn’t that smart? It tasted wonderful.

This meatloaf does not include alphabet soup but it still taste great.  When I cook meatloaf I feel like I am feeding my family a good wholesome meal.  Don’t get me wrong, I cook meals but this meal just gives me a sense of goodness and comfort.

Making meatloaf really is easy.  Just a few ingredients and you are done.  Try it, you will like it!

Hearty, comforting meatloaf

  • Total Time: 1 hour 20 minutes

Ingredients

Units Scale

2 1/2 pounds Ground Beef

1 small Onion – finely chopped

2 Garlic Cloves – minced

2 Eggs – slightly beaten

1 cup of Breadcrumbs

1 teaspoon Salt

1 teaspoon Parsley

1/2 teaspoon Pepper

Topping

1/2 cup Ketchup

1/4 cup Brown Sugar

1 tablespoon Mustard

1 tablespoon Worcestershire Sauce

Instructions

Preheat oven to 350 degrees.

Add the ground beef, onion, garlic, salt, breadcrumbs, parsley flakes and eggs in one bowl.

Mix thoroughly.

Add to meatloaf pan.  You can use a glass dish, bread pan, etc.

Make the topping to add to the top of your meatloaf.

In a bowl, mix the ketchup, brown sugar, mustard and Worcestershire sauce.

Smear it on top of the meatloaf.

Bake for one hour or until the internal temperature is 155 degrees.

Eat and enjoy.
